Big Jack's Caesar Salad Dressing

We eat this to start off almost every large dinner party. Big Jack developed this recipe while living in San Francisco in The Spencer House, the B&B started by both he and Banana Bee!

Ingredients:

1/2 cup Olive Oil (high quality)
1 Tbs. Dijon Mustard
1 Egg
1 Garlic clove, diced
1/2 tsp. Worcestershire sauce
1/2 Medium lemon

Salt, Pepper - to taste
Parmesan Cheese, grated
Anchovies
Romain Lettuce

Combine Olive oil, Dijon mustard, egg, garlic clove, worcestershire sauce, and lemon together in a jar and shake well. Add the salt and pepper to your liking.

For the Salad:

Spoon the dressing over the Roman Lettuce in a large bowl - mixing around with hands - until dressing completely coats all the leaves. Sprinkle parmesan cheese over the salad, you will need to add a lot more than you think, just keep adding it and tasting until it tastes right.

All the adults in the family put anchovies on their salads (once they are plated), us kids not so much.
